GRILLED GILT-HEAD SEABREAM: GOODMAN GOES A-FISHING

We are happy to introduce our new GOODMAN special, grilled gilt-head seabream available till the end of April. Despite GOODMAN's reputation of a meatlovers' paradise we are glad to meet the wishes of those of our guests that prefer fish with a fish dish in the spirit of GOODMAN.

Gilt-head seabream is so good on its own that there is no need for elaborate recipes. We grill our seabream on a Josper over high-quality charcoal and serve it whole stuffed with rosemary and garlic infused in olive oil. Scrumptious smoky garlic and rosemary aromas remind one of Mediterranean travels.

Gilt-head seabream is currently a very popular fish. It is a Mediterranean bream with tender white flash and a minimum of bones. It is called dorada in Spain, dorade in France, orata in Italy and so on because of the golden color of its scales (from oro - gold). Gilt-head seabream was appreciated even in Ancient Rome where it was farmed in artificial pools filled with very clean water. Modern seabream farms have progressed even further, seabream is farmed in special enclosures with artificial lighting that is designed to replicate the change of seasons. Seabream is nutritious as well as delicious, it's rich in minerals (iron, phosphorus) and vitamins (B1, C), it is also low-fat so suitable for any kind of diet.
